- 2 cucumbers
- 2 tablespoons fresh lime juice
- 1 teaspoon chili powder
- 1/4 teaspoon salt
- 1 tablespoon chopped fresh cilantro
- Peel cucumbers, slice lengthwise into quarters, and cut into 1 inch pieces; place in large bowl. Sprinkle with lime juice, chili powder, and salt; toss. Toss with cilantro. Refrigerate until chilled.
