- 4 cups cubed potatoes
- 1 (16 ounce) can diced tomatoes
- 3/4 cup minced onion
- 3 tablespoons butter
- 1 1/2 teaspoons minced garlic
- 1/2 teaspoon salt
- 1 1/2 cups cashews
- 1 1/2 ounces fresh spinach
- 1 1/2 teaspoons red pepper flakes
- 1 cup shredded Cheddar cheese
- 1/4 cup ranch dressing
- 1/4 cup hot sauce, or to taste
- Combine potatoes, diced tomatoes, onion, butter, garlic, and salt in a stockpot; bring to a boil. Reduce heat, cover, and simmer, stirring every 10 minutes, for 25 minutes. Remove the lid and continue cooking for 10 minutes more.
- Stir cashews and spinach into potato mixture; cook until spinach is lightly wilted, about 3 minutes.
- Transfer potato mixture to a serving dish; top with Cheddar cheese, ranch dressing, and hot sauce.
