Ingredients

  • 1 head cauliflower, cut into bite-size pieces
  • 1/2 cup butter
  • 1/2 (12 ounce) box vanilla wafer cookies (such as Nilla®), crushed very fine


Directions

  1. Place cut cauliflower in a large saucepan and cover with water. Bring to a boil and cook until just fork tender, about 10 minutes; drain and transfer to a bowl.
  2. Melt butter in a saucepan over low heat; add cooked cauliflower and vanilla wafer crumbs and stir until evenly coated.
