- 1 cup peanut butter
- 1 cup vanilla extract
- 1 cup white sugar substitute
- 1 large egg
- Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with a silicone baking mat (such as Silpat(R)).
- Mix peanut butter, vanilla extract, sugar substitute, and egg together in a bowl. Drop 16 spoonfuls of dough an inch apart onto the prepared baking sheet.
- Bake until set, about 12 minutes.
