- 1 cup shredded cooked chicken breasts
- 1/3 cup barbeque sauce
- 2 canned chipotle chiles in adobo sauce, finely chopped
- 3/4 cup finely shredded Colby-Monterey Jack cheese
- 2 fresh jalapeno peppers, each cut into 16 thin slices
- Heat oven to 350 degrees F.
- Cook chicken, barbecue sauce and chipotle peppers in saucepan on medium heat 5 minutes or until heated through, stirring frequently.
- Place crackers in single layer on baking sheet; top with cheese and chicken mixture.
- Bake 3 to 5 minutes or until cheese is melted. Top with jalapeno peppers.
