- 1/2 cup white chocolate chips
- 2 cups flaked coconut
- 1/2 cup white sugar
- 1/3 cup all-purpose flour
- 2 eggs
- 1/4 cup finely chopped almonds
- 1/2 teaspoon vanilla extract
- Preheat oven to 350 degrees F (175 degrees C).
- Melt chocolate in double boiler, in a saucepan over low heat, or in the microwave stirring occasionally until smooth.
- In a large bowl, combine coconut, sugar, flour, eggs, almonds and vanilla. Stir well. Fold in melted chocolate. Drop by rounded spoonfuls onto baking sheets.
- Bake in preheated oven 25 minutes, until set.
