- 4 (5 ounce) fresh or frozen salmon fillets, about 1 inch thick
- 1 cedar grill plank
- 2 tablespoons pure maple syrup
- 1 tablespoon minced shallot
- 1 tablespoon snipped fresh chives
- 2 teaspoons Dijon-style mustard
- 1/2 teaspoon salt
- 1/4 teaspoon crushed red pepper
- 4 Fresh lemon wedges
- Thaw fish if frozen. Rinse fish; pat dry with paper towels.
- Soak plank in enough water to cover for 1 hour.
- In a small bowl combine maple syrup, shallot, chives, mustard, salt, and crushed red pepper. Brush mixture onto salmon.
- For a gas or charcoal grill place plank on a grill rack of an uncovered grill directly over medium heat about 5 minutes or until plank begins to crackle and smoke. Place salmon on plank, skin side down. Cover and grill 12 to 15 minutes or until fish flakes when tested with a fork. Serve with fresh lemon wedges.
