- 2 pounds skinless, boneless chicken breast, cubed
- 1 red bell pepper, cut into strips
- 1/4 cup soy sauce
- 2 tablespoons fish sauce
- 3 fresh red Thai chile peppers, minced
- 1 tablespoon freshly squeezed lime juice
- 1 tablespoon rice vinegar
- 1 tablespoon finely grated fresh ginger
- 1/2 cup chopped Thai basil, or to taste
- 1 pinch salt and freshly ground black pepper to taste
- Combine chicken, bell pepper, soy sauce, fish sauce, Thai chile, lime juice, rice vinegar, and ginger in a slow cooker.
- Cook on Low until chicken is tender, about 5 1/2 hours. Add basil and cook until wilted into the sauce, about 30 minutes more. Season with salt and pepper.
