- 2 bunches kale, stems removed and leaves finely shredded
- 1 (15 ounce) can crushed pineapple, undrained
- 1/3 cup lemon juice
- 1/4 cup sunflower seed oil
- 1/2 cup sunflower seeds, or to taste (optional)
- Place shredded kale in a large bowl. Mix pineapple, lemon juice, and sunflower oil together in a bowl; pour over kale and toss. Sprinkle sunflower seeds over salad.
