- 1 pear, cored and diced
- 1/3 cup diced red onion
- 1 tablespoon olive oil
- 1 tablespoon balsamic vinegar
- 1 tablespoon chopped fresh thyme
- 1 (4 ounce) package crumbled blue cheese
- 1 French baguette, sliced and toasted
- 1/3 pound sliced prosciutto, cut into thin strips
- Mix pear, onion, olive oil, balsamic vinegar, and thyme together in a bowl; set aside to marinate for 5 minutes.
- Spread blue cheese onto toasted baguette slices. Spoon pear mixture onto the blue cheese. Top with prosciutto.
