- 2 tablespoons olive oil
- 1 small red onion, diced
- 1 medium red bell pepper, diced
- 1 (16 ounce) package frozen white corn kernels
- 1 teaspoon ground cumin
- salt and ground black pepper to taste
- 1 (4 ounce) container crumbled feta cheese
- 1/2 cup spinach, cut into 1/2-inch pieces
- Heat oil in a skillet over medium heat. Cook onion and bell pepper for 2 minutes. Stir in corn and continue cooking and stirring until onion is partially translucent, about 10 minutes. Season with cumin, salt, and pepper and stir to combine.
- Remove from heat and stir in feta cheese and spinach.
