- 1 cup all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/8 teaspoon salt
- 1/8 teaspoon ground cloves
- 1/8 teaspoon ground ginger
- 1 cup pumpkin puree
- 3/4 cup white sugar
- 1/4 cup vegetable oil
- 1 egg
- 1/4 cup chopped walnuts (optional)
- Preheat the toaster oven to 350 degrees F (175 degrees C) according to manufacturer's instructions. Coat a small loaf pan with nonstick cooking spray; dust with a dash of flour and tap out excess.
- Combine flour, baking soda, cinnamon, nutmeg, salt, cloves, and ginger in a mixing bowl.
- Blend pumpkin puree, sugar, oil, and egg in a separate bowl. Gradually add flour mixture until evenly incorporated; do not overmix. Pour into the prepared pan and sprinkle walnuts on top. Cover with foil.
- Bake in the preheated toaster oven until a toothpick inserted into the center comes out mostly clean, about 1 hour. Remove foil and continue baking until top is a deep golden brown, about 10 minutes more. Transfer to a wire rack to cool completely.
