- 1/2 lemon, juiced
- 2 tablespoons balsamic vinegar
- 1 teaspoon maple syrup
- 1 clove garlic, minced
- 1/3 cup extra virgin olive oil
- 1 cucumber, diced
- 1 small sweet onion, diced
- 2 roma (plum) tomatoes, chopped
- 2 (15 ounce) cans fava beans, drained
- Whisk the lemon juice, balsamic vinegar, maple syrup, garlic, and olive oil together in a bowl to make the dressing.
- Toss the cucumber, onion, tomatoes, and fava beans together in a large bowl; pour the dressing over the vegetable mixture and toss to coat. Chill for 1 hour before serving.
