Ingredients

  • 1 (5.6 ounce) package Knorr® Rice Sides™ - Chicken
  • 2 cups cubed cooked chicken breast
  • 1 cup chopped fresh spinach leaves
  • 8 cherry tomatoes, halved
  • 2 marinated artichoke hearts - drained, cut into eighths
  • 1/4 cup shredded Parmesan cheese
  • 1 lemon, zested
  • 1/4 cup lemon juice
  • 1 clove garlic, minced
  • 1 tablespoon extra-virgin olive oil


Directions

  1. Cook rice according to package directions; let cool.
  2. Place cooled rice, chicken, spinach, tomatoes, artichokes, cheese, and lemon zest in a large bowl, toss to combine.
  3. Whisk lemon juice, garlic, and olive oil together in a mixing bowl. Pour over rice mixture; toss to combine.
