- 2 tablespoons olive oil
- 1 onion, chopped
- 2 tablespoons garlic powder, or more to taste
- 8 zucchini, spiralized
- 2 tomatoes, chopped
- 2 cups Parmesan cheese
- 1 pinch salt and freshly ground black pepper to taste
- Combine olive oil, onion, and garlic powder in a skillet over medium heat and heat until oil starts to sizzle, about 3 minutes. Add zoodles and toss with pasta tongs. Cook for 5 minutes, tossing occasionally.
- Stir in tomatoes and Parmesan cheese. Season with salt and pepper.
