Ingredients

  • 1 tablespoon olive oil
  • 1/2 cup chopped onions
  • 1 (20 ounce) package Simply Potatoes® Mashed Sweet Potatoes
  • 1 cup whole milk
  • 1 cup chicken broth
  • 1 teaspoon dried thyme leaves
  • 1/2 teaspoon ground cumin


Directions

  1. Heat oil in large saucepan over medium heat. Add onions. Cook 5 to 7 minutes, stirring occasionally, or until onions are soft.
  2. Stir in all remaining ingredients. Continue cooking on medium heat 15 minutes or until flavors are blended.
  3. Carefully pour half of soup into blender. Blend until smooth. Repeat with remaining soup. Return soup to saucepan. Cook over low heat until heated through.
