- 2 cups spring mix
- 3/4 cup cherry tomatoes, halved
- 2/3 cup chopped cucumber
- 1/2 cup sliced salami
- 1/3 cup chopped red onion
- 1/3 cup blue cheese
- 1/3 cup red wine vinegar
- 1 tablespoon extra-virgin olive oil
- Combine spring mix, tomatoes, cucumber, salami, onion, and blue cheese in a bowl. Whisk vinegar and oil together in a small bowl and pour over salad; toss to coat.
