- 4 red grapefruits, peeled and cut into bite-size pieces
- 4 navel oranges, peeled and cut into bite-size pieces
- 4 kiwifruits, peeled and cut into bite-size pieces, or more to taste
- 2 Granny Smith apples - peeled, cored, and cut into bite-size pieces
- 1 cup chopped pineapple
- 1 pomegranate, seeded
- 1 lime
- 3 tablespoons finely chopped fresh mint
- Combine grapefruits, oranges, kiwifruits, apples, and pineapple in a large bowl. Mix in pomegranate seeds. Zest and juice lime over the salad. Sprinkle mint on top; mix once more. Refrigerate for at least 1 hour.
