- 1/2 ripe avocado, thinly sliced
- 1/2 ripe tomato, thinly sliced
- 4 thin slices cucumber
- 1 thin slice red onion
- 1 hoagie roll, split lengthwise
- 1 dash lemon juice
- salt and ground black pepper to taste
- 1 leaf Romaine lettuce
- 1 teaspoon vegan mayonnaise (such as Veganaise®) (optional)
- Layer avocado, tomato, cucumber, and red onion on the bottom half of the roll. Sprinkle with lemon juice, salt, and pepper. Place lettuce on top. Spread a thin layer of vegan mayonnaise onto the top half of the roll and place it on top of the sandwich.
