- 1/3 cup chopped fresh parsley
- 1/4 cup chopped fresh mint
- 1/4 cup olive oil
- 2 tablespoons fresh lemon juice
- 1/2 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- Combine watermelon, feta cheese, red onion, arugula, pine nuts, parsley, and mint in a large mixing bowl.
