- 3 large apples - peeled, cored, and chopped
- 1/4 cup white sugar
- 2 tablespoons apple cider vinegar
- 1 tablespoon ground thyme
- 1 bay leaf
- 2 tablespoons Calvados (apple brandy)
- 1 pinch salt
- Combine apples, sugar, vinegar, thyme, and bay leaf in a saucepan over medium-low heat. Simmer, partially covered and stirring often, until chutney is thick and sticky, about 1 hour. Stir in Calvados toward the end of the cooking time, and season with salt.
- Ladle hot chutney into a sterilized jar and close with a lid. Allow to cool and store in the refrigerator until use. Remove bay leaf before serving.
