Cucumber Blueberry Feta Summer Salad

Ingredients

  • 2 cucumbers - halved, seeded, and cut into 1/8-inch slices
  • 2 cups blueberries
  • 1 cup crumbled feta cheese
  • 1/2 cup chopped scallions
  • 1/4 cup finely chopped flat-leaf parsley
  • 3 tablespoons extra-virgin olive oil
  • 2 tablespoons white wine vinegar
  • 1 teaspoon honey
  • salt and ground black pepper to taste


Directions

  1. Combine cucumbers, blueberries, feta cheese, scallions, and parsley in a bowl.
  2. Mix oil, vinegar, honey, salt, and pepper together in a bowl. Pour dressing over salad; toss to combine.
