- 1 head cauliflower, finely grated
- 2 eggs
- salt
- 1 pinch ground black pepper
- Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper.
- Place cauliflower in a microwave-safe bowl. Microwave at maximum power until tender, about 4 minutes. Place on a kitchen towel and squeeze out all liquid; transfer to a bowl.
- Whisk eggs, salt, and black pepper in a bowl. Add to the cauliflower in batches; stir well. Shape cauliflower mixture into 3-inch tortillas on the prepared baking sheet.
- Bake in the preheated oven until set, about 20 minutes. Let cool slightly.
- Heat a skillet over medium heat. Cook tortillas until golden brown, about 1 minute. Flip and cook for 1 minute more.
