- 1 lime, juiced
- 1 (16 ounce) bag coleslaw mix
- 5 ounces baby kale, chopped into bite-size pieces
- 1/2 red onion, finely chopped
- 2 tablespoons sunflower seeds, or more to taste
- salt and ground black pepper to taste
- Whisk balsamic vinegar, olive oil, honey, and lime juice in a large bowl. Add coleslaw mix, baby kale, red onion, and sunflower seeds; toss to combine. Season with salt and pepper.
