- 1 large carrot, grated
- 1 large onion, finely chopped
- 2 cups dry bread crumbs
- 3 teaspoons chopped fresh parsley
- 3 teaspoons fresh thyme
- 1 cup butter
- In a large bowl combine carrot, onion, bread crumbs, parsley and thyme; mix well.
- In a large saucepan melt butter over medium heat. Reduce heat and stir in carrot mixture. Cook, stirring occasionally, until onion and carrot are tender and mixture is heated through, about 15 minutes.
