- 1 cup finely chopped kale
- 1/2 cup cooked quinoa
- 1/2 cup garbanzo beans
- 1/2 red bell pepper, chopped
- 1 carrot, grated
- 1 hard-boiled egg, chopped
- Dressing:
- 1/2 lemon, juiced
- 1 tablespoon olive oil
- 1 tablespoon chopped fresh parsley
- 1 teaspoon Dijon mustard
- 1/2 teaspoon maple syrup, or to taste
- salt and ground black pepper to taste
- Arrange kale, quinoa, garbanzo beans, red bell pepper, carrot, and egg in a bowl.
- Whisk lemon juice, olive oil, parsley, mustard, maple syrup, salt, and pepper together in a small bowl until dressing is well mixed. Pour dressing over salad.
