- 5 cups rolled oats
- 2 1/4 cups plain kefir
- 3/4 cup coconut oil, melted
- 3/4 cup honey
- 1/2 tablespoon ground cinnamon

- 1 cup chopped apple
- 3 eggs
- 1 tablespoon baking powder
- 1/2 tablespoon salt
- Combine oats, kefir, coconut oil, honey, and cinnamon in a large bowl. Cover and let soak, 8 hours to overnight.
- Preheat the oven to 400 degrees F (200 degrees C). Grease a 9x13-inch baking dish with cooking spray.
- Stir apple, eggs, baking powder, and salt into the oat mixture. Pour into the prepared baking dish.
- Bake in the preheated oven until the top is lightly browned, about 45 minutes.
