- 2 mangos (preferably honey mangos) - peeled, seeded, and diced
- 2 large roma (plum) tomatoes, seeded and diced
- 2 large cloves garlic, minced
- 1 shallot, minced
- 1 green chile pepper, seeded and diced
- 1 lime, juiced
- 3 tablespoons pineapple juice
- 2 tablespoons olive oil
- 1 teaspoon salt
- Stir the mangos, tomatoes, garlic, shallot, green chile pepper, lime juice, pineapple juice, olive oil, and salt together in a bowl; refrigerate 1 hour to allow the flavors to mingle before serving.
