- 3/4 cup gluten-free rolled oats
- 1/2 cup almond flour
- 1 tablespoon ground cinnamon
- 1 teaspoon ground ginger
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon vanilla extract
- 1 1/4 cups dates, pitted and chopped
- 3 tablespoons coconut sugar
- Place rolled oats, almond flour, cinnamon, ginger, nutmeg, and vanilla extract in a blender; blend until smooth. Blend in dates, in batches, until a soft dough forms. Shape into 1-inch balls and roll in coconut sugar.
