Black Bean Salad with Avocado-Lime Dressing

Ingredients

  • Avocado-Lime Dressing:
  • 1 avocado, mashed
  • 1/4 cup chopped fresh cilantro
  • 2 tablespoons lime juice
  • Black Bean Salad:
  • 1/2 cup pumpkin seeds
  • 4 cups shredded romaine lettuce
  • 2 (15 ounce) cans no-salt-added black beans, drained and rinsed
  • 1 cup grape tomatoes, halved
  • 1 cup corn kernels
  • 1 small red bell pepper, chopped


Directions

  1. Beat avocado, cilantro, and lime juice together in a large bowl until smooth.
  2. Heat a small skillet over medium heat. Toast pumpkin seeds in skillet until lightly browned and fragrant, about 5 minutes.
  3. Stir pumpkin seeds, romaine lettuce, black beans, grape tomatoes, corn kernels, and red bell pepper into the dressing to coat.
